MONOSODYUM GLUTAMAT (MSG)’ IN İNSAN PERİFERAL LENFOSİTLERİNDE KARDEŞ KROMATİD DEĞİŞİMİ ÜZERİNDEKİ ETKİLERİ

ÖZET
Bu çalışmada gıdalarda tat arttırıcı olarak kullanılan monosodyum glutamat (MSG)’ın genotoksik etkiye sahip olup olmadığı insan periferal kan lenfositlerinde in vitro kardeş kromatid değişimi (KKD) testi ile araştırılmıştır. Hücreler 24 ve 48 saat süre boyunca 3000, 4000 ve 5000 µg/ml monosodyum glutamat (MSG) ile muamele edilmiştir.
Monosodyum glutamat (MSG), insan periferal kan lenfositlerinde 24 saatlik muamele suresinde KKD’yi uyarmamıştır. 48 saatlik muamele süresinde sadece en düşük dozda (3000 µg/ml) KKD’yi kontrole oranla istatistiksel olarak önemli derecede uyarmıştır. MSG, PI’yı tüm konsantrasyonlarda ve muamele sürelerinde düşürmüş ancak bu düşüş kontrole oranla önemli bulunmamıştır.

ABSTRACT
The present research is aimed to study of genotoxic effects of monosodium glutamate (MSG), which used as a flouvor enhancer in foods, on human peripheral blood lymphocytes by in vitro sister chromatid exchange (SCE) test. The cells were treated with 3000, 4000 and 5000 µg/ml monosodium glutamate (MSG) for 24 and 48 hours. MSG did not induce SCEs in human peripheral blood lymphocytes in 24-h and treatment period. But MSG induced SCEs only in the lowest dose in 48-h (3000 µg/ml) treatment.
MSG decreased PI in all concentrations and in all treatment periods, but did not significant when compared to control.
